In Japan, the Kiritsuke is known as the master chef's knife. Use the Dual Core Kiritsuke for all tasks for which you would use a chef's knife. The Dual Core Kiritsuke is ideal for vegetables: julienne, dice, or brunoise cuts can be made effortlessly. It is also excellent for cleaning and portioning fish without bones, for example. With its straighter blade, it is ideal for cutting and pushing.


The blade of the Dual Core Kiritsuke is made of a very fine steel structure (carbon steel, chrome steel, VG10 & VG2). An artistically designed, radiating pattern of Damascus layers is visible on the highly polished blade of the Dual Core Kiritsuke. The traditional octagonal handle made of pakka wood with an ebony finish ensures a secure grip.
