Shun Premier knives

The blades of the Shun Premier knives with a core of VG MAX steel and a hardness of 61±1 HRC do not only have a beautiful grain, which is created by corroding the 32 layers of forged steel, but also have a hammer stroke surface, which is known in Japan as Tsuchime.

Thanks to this extreme hardness and the polished edge, this blade cuts food like a razor. But also optimal managebility was important for Tim Mälzer, who developed the knives series according to his premise: "A good knive does not only make working easier, but also helps succeeding". So, every damask knifed is adapted to its field of application by Japanese smithing artist from Seki. Because of the very symmetric shape of the walnut handle, every knife shape is suitable for right handers and for lefties. The sentence "use at your own risk", which is written on the wooden box of the Shun Premier knives should not prevent you from using them; so, after all, the risk of injury is much smaller if you use sharp knives instead of blunt knives, who entail the risk of slipping.
