Sharpening steel for grinding

A knife should regularly be sharpened by a long sharpening steel of at least 26 cm length or by an oval sharpening steel of a length of 32 cm, because with every cut the knife loses a bit of its sharpness.

Right handers hold the sharpening steel with the left hand and the knife with the right hand (lefties do it vice versa). Then both sides of the blade are sharpened for 10 times over all the lenth of the sharpening steel in an angle of 15°.
