The Shun cleaver has a thicker blade than damask knives and is therefore recommended for chopping coarser cuts such as meat with bones, spare ribs, chicken or pumpkin. The blade of the Shun cleaver is made of stainless AUS8A steel, the handle of water-repellent Pakka wood.
The Shun cleaver can be easily re-sharpened with a whetstone from the Kai series, taking into account only the cutting angle of 20 °.
